For four generations, a single family in Greece has cultivated these rare koutsourelia olives, still picking them by hand to ensure perfect ripeness and no bruising. The olives are then preserved using traditional methods of fermentation in a salt brine, with no synthetic colors or preservatives. 

They are meaty, fall off the pit easily (or choose pitted!), and they contain less sodium than most store-bought olives. 

Enjoy them as a healthy snack, use them in cooking, or share as an unexpected hostess gift. Save the brine to add to soups, salads, pasta sauces, and homemade broth for added richness and flavor.
